Easy Corn Bread

8-9 servings
1 1/4 Cups all purpose flour
3/4 Cup corn meal
1/4 Cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 Cup milk (Whole, 2%, skim or buttermilk)
1/4 Cup vegetable oil
1 egg, beaten
Preheat oven to 400 degrees F. Grease a 10" cast iron skillet. Combine dry ingredients. Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake uncovered for 20-25 minutes or until light golden brown and toothpick inserted in center comes out clean.
NOTES: This recipe can be made with less sugar or no sugar at all, depending on taste. The sugar will add sweetness and carmelize the top to be a golden brown.
Grease skillet with bacon grease and preheat in the oven for added flavor.
You can add whole kernel corn, chopped jalopeno peppers or chopped cooked bacon to the batter for added flavor and texture.
Serve warm with butter and honey.
